What is Parboiling?

Parboiling involves a hydrothermal treatment of paddy rice before milling. The process consists of three main steps: soaking, steaming, and drying. During soaking, the rice absorbs water, which prepares it for the subsequent steaming phase where it is subjected to high temperatures. This causes gelatinization of starch, making the grains firmer and less sticky when cooked.
